Chicken Guacamole Burgers and Zucchini Salad

Summer is the best time of the year, not only is it everyone I know birthday season with lots of parties and good times, but also the food! I love summer food, the smell of the BBQ during a long summer evening, with chicken or some fresh salmon, but also the cold salads made from local veggies.

As my chaos of June has come to an end, boyfriend and I have finally had an evening together where we could start up the BBQ and make some yummy chicken burgers with guacamole and feta and a side of fresh zucchini salad. This recipe is super easy and a great way to cook together. Divide and concur! It is the perfect meal to cook outside when it is way too hot and you don’t want to heat up the inside of your house. This has made my favourite list and I will continue to make these burgers and salad this summer for a quick and healthy summer meal.

Ingredients:

Burgers:

2 Chicken breasts

Olive Oil

Salt and Pepper

Chili Flakes

 

Guacamole:

1 large Avocado

Red onion

1 jalapeno

Salt and Pepper

 

Toppings:

Toppings for burgers are personal, so ultimately they are up to you. My choice of topping: Red Onion, Feta cheese, some tomatoes and lettuce.

 

Zucchini Salad:

 

3 small zucchinis ( I used 2 yellow and one green)

1 fresh chili

1 Lemon

Bunch of Mint Leafs

Salt and Pepper

Olive Oil

 

How to:

 

Slice the chicken breast in two to make 4 thin pieces of meat. Season with olive oil, salt and pepper and some chili flakes, set aside while the BBQ heats up

 

Meanwhile, prep the guacamole. Mush up half the avocado with diced red onion and grate the jalapeno. Mix up and add chunks of the other half of the avocado, season and stir in, try not to mush the chunks. I like my guacamole with some avocado chunks, but if you like it smooth mush it all!!

 

To Prep the Zucchini Salad, grab a bowl and add a lug of olive oil, juice of one lemon, salt and pepper and grate some fresh chili. Use a knife, or a veggie peeler and peel or cut the zucchini into super thin strips and toss in the bowl with some sliced up mint.

Cook the Chicken and build your burger the way you like! Now time to enjoy!!!
