Sometimes, you want something different on your tacos than just Pico de Gallo .  This Mango salsa recipe is super easy and quick to make. Perfect for my countdown to our Mexico trip and can be used on a variety of foods (not just tacos). You can double the recipe for a big party or cut it in half if it is just two of you. Serve it up with some tortilla chips to satisfy your sweet but salty craving (without more guilt than normal) or have it as a topping for a fresh salmon fillet. The possibilities are endless!

Ingredients:

2 ripe mangos (chopped)

cilantro (chopped)

1/2 jalapeno (diced)

1 red pepper (chopped)

1/4 red onion (diced)

2 limes (juiced)

Salt and pepper for seasoning

Method: 

In a serving bowl, add all the diced and chopped ingredients. Mix it all together and add salt and pepper to taste.  let it sit for a bit to absorb all the flavours. Serve with chips, tacos, quesadillas, even tastes amazing on salmon.
