For some reason, about 4 cans of canned lentils have ended up in my pantry. How? I am not even sure myself, but as my new year’s resolution has been to cut down on food waste, I had to figure out something to do with them. I have been researching and nothing came as an inspiration to try. I had this major craving for spaghetti and meatballs, and I thought, “HEY! Why not use lentils instead?” so I dug out my cans of lentils and put something together. That night the nerd herd was coming over so I used them as guinea pigs and they all gave it thumbs up. Here is what I did!

Ingredients:

2 cans of Lentils drained (40 oz)

3 cloves of garlic

1 ½ cup ground flax seed

Sundried tomatoes in Oil

Salt for seasoning

 

Method:

Preheat the oven to 375 and line a baking sheet with parchment. In the food processor add the drained lentils, peeled garlic, ground flax seed and about 2 forks full of sundried tomatoes and a drizzle of oil from the sundried tomatoes. Blitz the food processor until the mixture is the consistency of cookie dough. Roll into balls and place on the cookie sheet and bake for about 35 min. Once you are done baking it serve with your choice of spaghetti and sauce. I used my easy peasy sauce and added diced tomatoes and chilli flakes for some heat.

I have not tried it yet, but I think these “meatballs” would taste amazing in a meatball sandwich!
