Beet Salad

This weekend has been the first of many feels that says spring is near, if not already here. With spring near, it makes me so happy that the sun will be shinning longer, and fresh veggies will be come out soon! With a hint of spring on the horizon, I made this yummy salad that really can be made all year round. Only 4 ingredients and a few seasonings, and loaded with flavours and colours.



1 can of beets, in water

Red Onion, sliced


Cottage cheese

Salt and Pepper for seasoning

Olive Oil

Balsamic Vinegar Reduction



Drain the beets. In a bowl, add your desired amount of lettuce and red onions. Roughly slice the beets and add to the bowl. Scoop about 1/2 cup of cottage cheese into the middle. Season with a little bit of Salt and Pepper, and drizzle with olive oil and balsamic vinegar. Enjoy!
