FINALLY, I am posting my 4th and FINAL day of my self-challenge from what seems like months ago. I know it is no excuse, but I have been super busy with projects at work and gallivanting around Mexico.

I am really glad I did this challenge. It got my creative flow regenerated and I came up with tones of inspiration that I want to bring to life and share on for upcoming posts!

I recreated this recipe twice during the challenge because it is so versatile. It contains ingredients I always have and is so fast, and highly requested in my house. It can be made for meat lovers or vegetarians; it can be spicy or mild. The controls are up to you. Unfortunately, I do not know the exact measurements, so it is all approximate values of all the ingredients because some days I make it spicy and some days not so much. The two days back to back I made tofu and broccoli and the second day I made the noodles with chicken. You can use your protein of choice.

Night one:

 

Egg Noodles

Extra Firm Tofu

2 tablespoons Sesame Oil

2 tablespoons Soya sauce

2 tablespoons Garlic and Chili Paste

1 tablespoon Miso Paste

3 Garlic cloves, minced

Thumb-sized Ginger, minced

Mushrooms

Broccoli

 

Garnishes:

Sesame seeds

Siracha

Green onion

 

 

 

Prep the noodles to the package instructions. Set aside. Cube the tofu and place into a bowl. Add about 2 tablespoons each of sesame Oil, soya sauce, and garlic and chilli paste. Add a spoonful of miso paste. Mince the garlic and ginger and add to the bowl. Toss the tofu and make sure it is all coated. Set aside and prep your veggies. Heat up a wok or a deep frying pan and add some sesame oil and a bit of the garlic and chilli paste. Cook up the veggies and tofu. Set aside.

 

Refresh the noodles by running the cooked noodles under cold water. Add a bit more oil and garlic paste. Add the noodles and let them get crispy. Serve up and garnish with your choice and enjoy!

 

 

Notes:

I use all the same ingredients but different protein when I change it up. When I made my chicken with crispy noodles, I also added veggies. This is one of my favourites to do when we are super busy because you can use pretty much any veggies or meat/protein.
