Believe it or not, growing up I used to DESPISE zucchini. Today, I am an advocate for the cliché “your taste buds will change” because really, it is not a cliché; it is the truth (science!). I won’t get into all the science of taste buds changing; I will leave that up to you. But I will drive right into this salad. It not only is Zucchini, but it is also crisp, fresh, sweet and salty and perfect on its own or as a side to any summer barbeque.

Ingredients:

3 medium sized Zucchini (sometimes I throw in a yellow one to add colour)
1 Lemon
3 Sprigs of Mint
Feta
Olive Oil
Salt and Pepper

Method:

Wash the Zucchini. Using a vegetable peeler, peel the zucchinis onto a plate, peel them until you get to the core. Zest half the lemon on top of the pile of zucchini, and juice the entire lemon over the top as well. Take the leaves off the sprigs of mint and roughly chop the leaves and sprinkle over the top. Crumble your desired amount of feta and drizzle some olive oil. Season with Salt and Pepper. Toss all the ingredients to coat all the Zucchini, serve and Enjoy!!!
