This week is my summer salad series! Starting with my couscous salad (recipe below)! I am going to share a few of my favourite summer salads. Some posted here on the gram, and some on my blog.  Salads are my favourite for the long hot days in the summer. I find you do not want to eat much or turn on any heating apparatus in the house.

Summer is also the season where we have access to so many fresh and local options that we should take advantage of. This dish is loaded with sweet onion, parsley, tomatoes and peppers. Dressed only with red wine vinegar. It takes less than 5 minutes, can be made in a big batch and stored in the fridge for a few days in a sealed container.

Fresh Feta Couscous Salad

Ingredients:

2 cups of couscous cooked
1 red pepper
1 bunch of parsley
half a red onion
a handful of cherry tomatoes quartered
1/4 cup crumbled feta cheese
4 tablespoons red wine vinegar
black pepper

Method:

In a bowl, prepare the couscous by adding 4 cups of boiling water to the couscous and let sit and cover. Prepare the veggies. Dice the peppers, parsley, red onion and quarter the tomatoes.  Using a fork, break up the couscous, add in the chopped vegetables and crumbled feta, mix. Once it is all mixed up add the vinegar and ground black pepper. Mix again. Serve, and enjoy!
