If I am going to be honest, this recipe came up because I was craving a burrito bowl from Chipotle, and I didn’t want to drive all the way to Langley, or downtown Vancouver. So as I kept opening and closing the fridge, freezer and all the cupboards with not inspiration and not wanting anything that was in them, a light bulb went off that I had a big bag of frozen corn in the garage freezer and a bunch of cilantro that needed to be used or it was going to end up in the compost. That is when this sweet bowl of copy cat Chipotle corn salsa came from.

This salsa is sweet, spicy and savoury. Saves perfectly if you want to add it to your eggs in the morning or on its own with some chips as an afternoon snack. Make more and it uses are endless. 

Ingredients:

  • 12 oz corn kernels (frozen or fresh)
  • 1/2 cup finely chopped red onion
  • 1/4 cup finely chopped jalapeño pepper
  • 1/2 cup chopped fresh cilantro
  • 1 lime, juiced
  • 1 TBSP olive oil
  • 1/4 tsp salt, plus extra to taste

Method:

Cook corn via your favourite method! Allow corn to cool and combine with onion, jalapeño, cilantro and add lime juice with a tablespoon of olive oil then season with salt. Toss it all together and chill until ready to eat! It’s great right away and even fantastic the following day!
