Cheers, it is the weekend!!! A beautiful weekend here on the west coast. The sun is shining, the weather is warm so why not have a nice cold drink.

Ginger and Rhubarb Cocktail.

Are you running out of idea’s to use up all that fresh rhubarb? Try infusing it with liquor. This recipe can easily be adapted to what you enjoy. It will work with any clear alcohol but is best with Gin or Vodka.

Rhubarb infused liquor

Use this infused liquor on its own with some ice or top off with some soda water for a nice sweet and spicy drink

It is super easy, slice up the rhubarb, and a toss a chunk of ginger into a mason jar, sprinkle some raw sugar on top and pour in your choice of boozy liquid. You will want to use the Pinkest rhubarb you can find as it will turn the liquid to a beautiful soft pink. And you don’t need to peel the ginger just toss it in.

 

Rhubarb infused gin cocktail

 

Ingredients:

Rhubarb

Ginger

1 tablespoon raw cane sugar

Gin or Vodka

 

Method:

Slice up the pinkest part of the rhubarb, and add it to a jar, toss in a chunk of ginger and add a tablespoon of raw cane sugar to the jar. Top off with your choice of Gin or Vodka and seal the jar and give it a shake. Let it sit on your counter for up to 2 weeks but not longer than 4 weeks, giving it a shake every day or so. Enjoy!
