Sometimes all I want in the winter months is a salad, but something about a nice fresh salad in the winter does not make sense to me. Many years ago, my grandpa would make this spinach dish, not too sure what it was, but it was always tasty, and I never knew what was in it. Lately, I have been making a variety of different warm salads and I am going to share a few with you. This First one is a warm spinach salad. It even takes less time than making a fresh salad in the summertime.
Spinach
2 cloves of garlic
Mixed Mushrooms sliced
Salt and pepper for seasoning
Balsamic Vinegar
Olive Oil
Method:
In a medium-sized pan over medium heat, sauté garlic with a splash of olive oil. Add the mushrooms and let them cook. They will shrink a bit but let them caramelize. Add a drizzle of balsamic and let is reduce. Once everything is all yummy and caramelized, quickly add in the spinach and let wilt a bit. Serve and enjoy!
Quick note: You can really add whatever you want into your salad, some of my favourite things to add are onions, peppers, bacon, anything that is yummy when sautéd.
