Ingredients:
1 can of beets, in water
Red Onion, sliced
Lettuce
Cottage cheese
Salt and Pepper for seasoning
Olive Oil
Balsamic Vinegar Reduction
Method:
Drain the beets. In a bowl, add your desired amount of lettuce and red onions. Roughly slice the beets and add to the bowl. Scoop about 1/2 cup of cottage cheese into the middle. Season with a little bit of Salt and Pepper, and drizzle with olive oil and balsamic vinegar. Enjoy!
