Blueberry Green Tea Popsicles

It feels like it is 1000 degrees out and I live near the water. The only way I have been able to cool down is Ice cold beverages and showers.  Sometimes thou, you do not want to drink, or shower! I made these tasty popsicles using Epicures Sencha and Jasmine Green Tea some local blueberries and simple mint syrup.  Perfect for everyone in the family. mint green t

I bought an ice pop mould off amazon and about 300 popsicle sticks to go with it and so far I love it! Not only do I just eat the popsicles, I sometimes use it as ice when I make vodka sodas (adult popsicles maybe??)

For this recipe, it calls for Mint Simple Syrup. I used this recipe here.

Ingredients:

3 tablespoons Mint Simple Syrup

2 tea sachet’s brewed Green Tea

1 cup Blueberries

Method:

Make the mint simple syrup, you can store it in the fridge in a sealed container, I made it a few days in advance because it is also good in mojitos. Brew the tea and let it cool in the fridge. In a blender, blend everything together until smooth. Pour into popsicle mould, freeze and enjoy!!!
