In this household, we love Banana Bread, we always have a loaf of banana bread on the go. But recently, we have been making some changes and adjustments to our eating and cut out refined sugar, and a large amount of carbs. Restart, ya know?

Kodi attempted to make granola when I was away and as he said: “it failed. A big big fail”.  It happens! I knew he was craving something sweet and was getting tired of eating the same breakfast burrito every day (variety, am I right?), so I made this granola to satisfy all cravings, banana bread and a little sweetness.

It is tasty,  crunchy, and banana flavoured, with some chocolate chips.  It is vegan and gluten-free and uses a natural sweetener. The granola is great on its own or topped on yoghurt and fruit.  If you are celiac, please make sure you get pure oats. Oats are generally gluten-free but may have come into contact with gluten as most commercial oats are processed in the same facilities that also process wheat, barley, and rye.

 

Note: Use dark chocolate chips.

Ingredients:

3 cups Oats

Crushed Pecans

Crushed Walnuts

1 tablespoon Cinnamon

1 tablespoon Maple Syrup

1 Mashed Banana

2 tablespoon Liquid, or melted Coconut oil

Splash of Vanilla

Dark Chocolate Chips (options)

Banana Chips

Epicure Cocoa Crunch 

Method:

Pre-heat the oven to 350. In a bowl Mix together the oats, walnuts, pecans and the cinnamon.  I love cinnamon, so I put lots in, but add the amount you like, there is no wrong answer.  Mix it all and make sure everything is evenly coated with cinnamon. Add the liquids. About 1 tablespoon of maple syrup, one mashed banana, 2 tablespoons of coconut oil and vanilla. Stir it all together until everything is coated.  Line a baking sheet with parchment paper, and put the mixture on the pan and level it out to one layer. Sprinkle with Chocolate chips and cocoa crunch and bake for 20 to 25 min.

Once it is baked and cooled, sprinkle the banana chips and store in an airtight container in the fridge.
