A little over 9 years ago, I was in Vietnam. I was never a HUGE fan of Vietnamese food, but after that trip, I LOVE Vietnamese food. And not just pho, but spring rolls, salad rolls, banh mi sandwiches, lemon grass anything and the list can go on and on.
Over the past few years, we have made pho, it was a challenge in itself, spring rolls and banh mi sandwiches. But one thing I could never get right was rolling up a spring roll! It always ripped, fell apart or looked like a 2-year-old did it. After hours of watching YouTube, I finally mastered (not really, but in my world, I mastered) rolling up a salad roll!!!
I even made a video of it, but I am too shy to share it, as I am still working on my video skills.
I made a spicy tofu lettuce wraps! OMG, they were so good. I used the epicure Asian shake spice mix (unfortunately you cannot get any more, and I think my cousin bought me all that was left in Ontario!) It’s loaded with ginger, garlic, sesame seeds, and I mixed it with sesame oil, sriracha and soy sauce, and coated tofu with the mixture.
Yeah, this recipe was kind of whatever was around we used. So this blog post is not really how to make what we made, more of a “you do you” recipe. I list the ingredients below but between Kodi making the peanut sauce, and me making the salad rolls, it was all to taste, I will also share my favourite video on how to pack and roll your salad rolls if you want to try it as well.
Kodi was in charge of making the peanut dip so I will type out what he told me in a text message on how he made it!
Peanut Satay Sauce Ingredients:
peanut Butter
soy sauce
lime juice
coconut milk
cilantro
chilli
chilli sauce
fish sauce
water
There was no real method to his madness when it came to this sauce. But it was all to taste. We like things spicy, so we added more spice, but you can use more soy sauce to make it more salty etc.
Lettuce Wraps
marinated tofu
green leaf lettuce
carrots cut into matchsticks
cucumber slices
rice paper wraps
rice noodles
cilantro
optional: crushed peanuts
