It is almost the day to celebrate love. I mean every day we should be celebrating love, but Valentine’s day is the day. In a new relationship, or a long-term relationship, or single. You all deserve chocolate.

In this household, we have not fallen off the new year’s resolutions wagon yet (a new record for us), but with the chocolate holiday of the year coming up, I wanted to create something that still fed that chocolate itch, and was healthy(ish).

This recipe can be made any time of the year, as the colours are what made me think of Valentines Day (red cranberries and white almonds and coconut). It is fast and easy, not loaded with sugar and can be enjoyed by everyone.

Ingredients:

12 ounces dark chocolate (60% Cacao), chopped and separated

2 cups Whole Dried Cranberries

1 cup sliced almonds

1/2 cup shredded unsweetened coconut

 

Method:

Line a baking sheet with parchment paper. On a double boiler, melt the chocolate until smooth. Pour it onto the baking sheet, using a rubber spatula to spread it out evenly. Sprinkle cranberries, almonds and shredded coconut over the chocolate. Place in the fridge to let set. Once it is set, break it up and enjoy.
